L’Effervescence believes in achieving the boundaries of gastronomy in the spirit of “Ichiza Konryu” -> which means unity of the ingredients, space, tableware, staff, and customers as one.

Chef Shinobu Namae believes that good food is something that can fascinate the mind, and L’Effervescence aims to be a place where guests can experience such unknown and mysterious sensations.

The restaurant houses 40 seats in a Japanese ambiance and private rooms in the basement floor. A large open kitchen with a wood-fired oven is located on the basement floor, from where you can watch the team of chefs at work.

We ordered the Chef’s Omakase as follows:

100 year old Japanese distilled water

Omotenashi cocktail 🍸

Vegetable crisps

Served with Tofu sour cream

Matsutake mushrooms, horsehair crab, sasanishiki risotto 🍄

Home made Potato focaccia, sourdough 🍞

L’Effervescence uses an abundance of wild vegetables, including more than 30 types each season, and wild herbs sourced from an expert in the field.

Tokyo turnip 🧅

According to L’Effervescence, the turnips changes in flavour and texture along the seasons. It is hard and bitter in autumn 🍂 and sweet and soft in winter ❄️.

Amadai gently poached in whey, dadachamame, myoga, ginger, shiso flower 🌸

Kyoto duck wood-fired over local mizunara oak, classic red wine sauce, maitake 🦆mushrooms, makomodake

VERDICT:

L’Effervescence was perhaps one of the highlight of my Japan trip this Autumn 2022. A French restaurant with a Japanese Kaiseki concept.

The presentation and explanation by the server was good (words cannot describe their Omotenashi (おもてなし) hospitality spirit!)

But I was a little disappointed with their signature turnip dish as I expected a little more of a WOW factor. My favourite dish was the Duck thigh and scallop ravioli with chestnut soup. It was so delicious that I had 3 servings of it.

The tea ceremony at the end of the meal was a nice touch and made the dining experience extra special. Overall, L’Effervescence is nice to try once.
