This is my second visit at this incredibly difficult to book restaurant (took us a 3-4 months wait) & we decided to go for the Fancy Omakase Menu this time. Chef Kazu also threw in random items that were not in the menu.

As usual, ingredients sourced were all the finest ingredients; quality & technique is near perfection!

Whether it is nigiri (nodoguro or chutoro) or the dishes served before it, like spiny lobster with uni, or smoked meji-makuro, prove just as memorable.

There is only one sitting at lunch and dinner at the handsome, curved counter.

Scallop, Trout roe, & Mountain vegetables White asparagus & mustard egg, kimizu sauce is the egg yolk sauce

Smoked young tuna served with bamboo shoot and shishio pepper.

VERDICT:

My second visit to Hamamoto and it was definitely an amazing experience as per the first.

Every dish was done intricately and the presentation for the dishes are absolutely superb. The freshness of the ingredients can be tasted at every dish and I really like the seasonally ingredients and dessert offerings.
