Our Spring Menu are as follows:
1) Amuse Bouche ✨✨
Spring vegetables - zucchini🥒, fava beans💚, and tomatoes 🍅
A light edible no-flour monaka bite filled with bechamel made from soy milk infused with smoked bonito.
2) White Hokkaido corn 🌽 and DOP Fortina cheese (delicious Italian cheese 🧀) in a yellow saffron puff, topped with a smoked egg yolk jam.
3) Artichoke served in kombu dashi with essential oils of almond, tomato, parsley and dill, and finished with elderflower vinaigrette. 💚
4) Tapinambur
Home cured sardines and hand dived Hokkaido scallop 🇯🇵
5) White Asparagus with Nero Di Seppia (cuttlefish ink), Salsa Verde (green sauce from chopped herbs 🪴), Bottarga (cured fish roe) and served with 6 different type of pepper: Orange yuzu and 5 black pepper from Cambodia carefully picked based on it’s fruitiness.

7) My favourite dish of the night - 32 egg yolks Tagliolini – Bafun sea urchin and Ossetra caviar.
The 32 egg yolk tagliolini is topped with Hokkaido murasaki uni with oscietra caviar. Amalfi lemon zests is drizzled for light acidity. The yellow sauce base is scampi bisque with bafun uni.
