Nusara serves traditional Thai cuisine with a modern update on the chef’s family recipes and culinary traditions.

The 12-course tasting runs through intricate snacks such as mackerel with coconut and cucumber, Hokkaido scallop with sweetcorn and cured egg yolk, and tom kla soup, plus a signature crab curry, presented on a crispy betel leaf with horseshoe crab roe.

There are larger family-style courses including Bumbai Neua, a tender beef cheek in a rich, Bombay-style curry with pickled cucumber.

The meal starts off with a quick tour of the kitchen and the “living room” at the 3rd floor where you’ll be served 2 yummy amuse bouches at each venue. a bit gimmicky but it was alright.

SOUTHERN OF THAILAND - Shrimp head, with pork, beef chicken beneath

NORTHERN OF THAILAND - Crispy and creamy from coconut filled with lemon grass, gelatine made from the Fishball

3️⃣ Caviar south of Thailand inside Chinese dumpling with sundried fish.

4️⃣ Baked tomato skin wrapped with spicy beef tartar garnished with garlic flower, together with Vietnamese coriander

5️⃣ Smoked King mackerel / Tom – Som Broth

6️⃣ Squid / Cucumber / Heirloom Tomato / Edible Flower, Coriander

7️⃣ Blue Swimming Crab from the Southern of Thailand, Cooked with yellow colour, Horseshoe Crab Roe / topped with Betel Leaf

8️⃣ Hokkaido Scallop / Kaffir lime Kosho & Fish sauce

1️⃣6️⃣ Traditional Thai Popsicle, Thai calamansi, Seasalt & Ice. With Thai Calamansi for fragrant & aroma

1️⃣7️⃣ Sago boiled with fresh coconut juice. Steamed taro, young Coconut meat & salted coconut ice-cream & palm sugar poured with salted coconut milk and sea salt. Served with raw chestnut.

VERDICT:⁣

Overall a good restaurant to try once. However I felt that for 1/3 the price, you can have excellent restaurants (perhaps without the same creativity) with equivalent service. Yet it doesn't hit the absolute memorable levels of some 2 or 3 star Michelin restaurants, particularly given the price. Desserts would need to work on improvements.

Was unable to make out some of the explanations of the dishes, but other than that service was prompt. Great showcase of local seafood and cuisine as well. 😊
