South East is a private dining concept focused on smoking techniques and South East Asian flavours helmed by Shane & Eve.

The private dining serves 7 course meal that covers a wide variety of South East Asian ingredients such as herbs and curry based and spices. The cooking techniques is also pretty unique, for examples,   Filipino styled pickled called Atchara is used in the pairing dish for the 5 Spice Beef Short Ribs and also interesting there is a take on Singapore’s Teo Chew cuisine - Kway Chap.

📖 Menu

1️⃣ STARTERS ⚡️

🌮Amaebi (sweet shrimp) dressed with orange dressing, finished with some fried turmeric leaves.

🐄 South East’s take on Kway Chap. Tao Pok filled with veal heart cured in Shao Xing wine for 5 days, smoked thinly sliced and paired with cauliflower purée that has been seasoned with kway chap seasoned raising liquid.

🧶Beef cheek curry croquette. Smoked beef cheek for 6 hours, pulled it apart and fry it into a little ball with curry rendang.

2️⃣ 🦪Oyster from Yamada Bay, Iwate.

Smoked Watermelon granita, garnished with mint and spring onion. Added fried shallot to add a bit of sweetness.

3️⃣ 🐟Cold smoked hamachi served with Sakura cheeks. Served with ponzu with 2 different sauces: White Cardiff & starfruit bastachio finished with curry leaf oil.

3️⃣ 🥬 Broccolini, Butternut pumpkin from Australia. Served with smoked eggplant rempah. Topped it off with toasted grated coconut & roasted garlic mustard.

4️⃣ 🦐 Smoked wild caught tiger  prawn served with coconut husk in rempah sauce.

Sauce is made from tapioca leaves and carrots. Carrots is slow cooked and caramelised and seasoned with prawn stock, coconut milk and Filipino dish called crab fat conominent inerts and row of the crab.

Served along side with the Japanese grilled rice ball.

5️⃣ 🍚 Indonesian dish called  Nasi Bakar Bumbu (Indonesian Rendang Grilled Rice) + Squid.

The base is nasi kutu, mixed it with some herbs and wrapped with banana  leaves and charcoal grilled served with sambal matah (Javanese style sambal).

6️⃣🥩 Five spice beef short ribs traditional style bbq smoked for 10 hours using lychee wood.

SIDES:

➡️ Instead of brown sugar, pairing sauce uses ketchup and bbq sauce.

➡️ Cabbage pickled marinated using soya sauce and sesame oil.

➡️ Filipino styled pickled called Atchara

Instead of using green papaya used green  mango.

➡️ Potato & fried shallots
