The location of Matera Restaurant is located at The Fullerton Waterboat House, which previously houses Basque Kitchen by Aitor.
The restaurant serves Italian cuisine with tinges of Asian influences. Think bold and spice flavours.
Chef Bjoern has had years of experience in 2-starred Octavium and 3-starred French Laundry.

Starters:
Mala spiced black olives, Sichuan pepper, dried chilli and garlic
Parmesan cheese ball with lemon mayonnaise and anchovies & edible flowers
Amuse Bouche
Pomelo tart - mixed of white & pink pomelo, some pine nuts, anchovies and Ebi Sakura (left)
Pastry puffs - Japanese egg yolk mixed with duck saucing topped with corn & chilli powder (right)
foie gras mousse marinated for 3 weeks with miso sake, alabu lemon jelly and edible flower (above). Comes home baked brioche glazed with Chinese sweet vinegar (Below)
Hanasaki crab / king Kombu crab pasta from Hokkaido region finish it with spice, cut chilli and chilli oil
Charcoal smoke red prawns topped with home made XO sauce prawn paste served with sesame prawn toast which you scoop up all the juices of the prawn on the toast.
In Italy, scarpetta means sopping up all the sauce left on your plate (or in the pot) with bread. The literal meaning of the term is “little shoe,” which comes from the fact that a shoe, just like the bread on the plate, drags up what’s on the ground.
Chargrilled Amadai, Japanese trout fish, accompanied by cellchew and carbonara.
Waygu stocked beef from Australia, M6 marbling, purée mix from Comté cheese and celeriac spring onion oil. artichoke stuffed with veal tendons, crispy artichokes, deep fried leek, garlic flower and beef jus and truffles
DESSERTS
Chocolate cake, coffee jelly, vanilla ice cream, caramel, on top will be waffles
Oolong tea snow skin with red bean paste and hazelnut (top right)
Pineapple tart, passion fruits and caramel (middle)
Chocolate bonbons with Sichuan peppercorn (bottom)
Review:
Overall, the menu is seemingly value-for-money prices. Every dish was well done, & my favourite was red prawn ravioli and the crab pasta. The service was impeccable and the view was beautiful ! It’s only a matter of time before they have a Michelin star! ☺️
