Province, a restaurant opened by ex-Magic Square Chef JJ, explores the use of contemporary South East Asian ingredients with modern techniques through the uses charcoal grill as the main cooking method.

SNACKS

1️⃣ “The one that burnt me"

Yam, celtuce, deep fried Bao and vegetarian XO

2️⃣ Pumpkin, salted egg and curry leaf

Japanese kabocha pumpkin marinated in smoked coconut cream, deep fried tempura style to golden perfection, garnished with curry leaf, kombu and roasted pumpkin seeds powder, and a side of salted egg sauce

3️⃣ Refreshing medley of crustacean flavours with pickled mussels, cucumber, corander and chilli on a bed of tofu

4️⃣ Crustacean I

White corn from Cameron Highlands charred in chicken fats, and wild caught flower crabs topped with foam made of milk, corn husk and corn cobs

5️⃣ Into the Garden

A homage to Chef David Kinch, a 3-Michelin chef whom Chef used to work with during his stint in Manresa and taught him to use ingredients that are readily available to create this pretty, farm-to table dish! Ravioli stuffed with grilled spring onion and caramelized onion surrounded with seasonal vegetables dress.

6️⃣ Tubers

Gnocchi made of Japanese sweet potato cooked in duck fat and sweet buah keluak sauce underneath smoked sweet potato espuma, topped burnt onion powder

7️⃣ Crustacean II

Crayfish, homemade rice noodles, crustacean broth and egg flower.

8️⃣ Finned

Pomfret, charred cabbage, garlic puree and a calamansi beurre blanc sauce

9️⃣ Hog.

Sarawak pork aged with shio koji for 7 days, tempeh purée, Sarawak pepper sauce and green mango chutney

🔟 DESSERT

Black sesame parfait sandwiched in between wafers topped with coconut caramel sauce, mushroom crumble & mint

VERDICT:

The menu at Province is a delightful surprise. The flavors and presentation were impeccable, showcasing culinary mastery. Stories and inspiration behind each dish were unique and personal.

Aesthetically the pictures speaks for itself. Being able to watch the chef put the meal together in front of you was another great feast for your eyes.
