Cherry tomatoes marinated in yuzu nectar for 3 days & dipped in green tea jelly

15 days dry aged US duck from Maple Leaf Farms in Indiana, US which was chosen for breeding White Pekin duck known for its tender, mild gamey flavour and well balanced ratio of fats to meat. After dry aging, it's then hung over binchotan charcoal to let its fats drip down and the result is perfectly crisp skin and tender juicy meat.

While waiting for the duck, Chef prepared the salad to go with in front of us with locally sourced ingredients.

Same duck made into rilette wrapped in deep fried pastries.

VERDICT:

Excellent combination of eastern ingredients with western cooking style. One of the most innovative chef. The attention to details - the fusion of local delicacy with a modern interpretation.

Have a number of highlights of - The Jeju Island Abalone, Dry Aged US Duck Crown were my favourite. Over-ripped Persimmon was also unique as a dessert.
