We took the “Trust Me” lunch and added on some dishes (Bone Marrow + Marron Lobster) as follows:
1️⃣ Bread and snacks
🍣 Smoked Petuna Trout from Tasmania and Roe tartelette and lard sandwich and mouuakarrah.
🎃Pumpkin Mousse
2️⃣ Starters
The Gambas starter is a cold dish that featured small smoked prawns served with a Yuzu kosho flavoured broth.
3️⃣ Mains
🦞 Marron Lobster, grilled with coffee oil.
🥩 Bone marrow from Tasmania
Potato with bone marrow with edible silver on the top and savoura mustard sauce.
🧼Palate Cleanser
Homemade soursop ice-cream.
4️⃣ Dessert
Waffles topped with fig. There is walnut sorbet infused with fig leaves hidden underneath the waffles. Served with hot cream milk.
